In this blog, we are going to share our favourite recipes, perfect for busy student life. Those are all dishes we often make when prioritising both efficiency and taste.

Shawarma Wrap – My Go-To Student Lunch

This shawarma wrap is one of my favourite meals for busy student life. It is quick, filling, and easy to prepare in advance.

The best part is that I already have air-fried chicken stored in the fridge, marinated with paprika, cumin, salt, and pepper. This means lunch takes only a few minutes to put together.

What you’ll need:

  • Tortilla wraps
  • Air-fried shawarma-style chicken
  • Aioli (I usually buy mine from Jumbo)
  • Hummus (optional)
  • Vegetables of your choice:
    • Lettuce, Tomato, Onion, Parsley

How I make it:

1. Take a tortilla wrap and spread a layer of aioli (and hummus if using).
2. Add the chicken and your favourite vegetables.
3. Roll the wrap tightly.
4. Toast it in a pan for a few minutes until golden and crispy.

Sometimes I even use the same fillings on bread instead of a tortilla wrap. It is a great meal-prep option because the chicken is already cooked, making it easy to assemble every day and take with me on the go between lectures and study sessions.

Doghramaj – Quick and Refreshing Soup!

Ey there! It has been sunny and scorching hot over here! The best way to handle the heat? A cold soup! I present to you Doghramaj – it is an Azerbaijani version of the cold soup made from ayran (also known as buttermilk). The name comes from a Turkic word meaning β€œto chop into small pieces,” referring to the finely chopped ingredients. It is super refreshing, healthy and insanely delicious. Here is the recipe!

Ingredients

  • 1 litre plain yoghurt or thick Greek yoghurt. (If you can get Turkish yoghurt, even better!)
  • 500 ml of cold water
  • 2 cucumbers, finely diced
  • 2 hard-boiled eggs, chopped (optional but common)
  • 3–4 scallions, finely sliced
  • Small bunch each of dill and cilantro, chopped
  • A few mint leaves, chopped
  • 1 garlic clove, crushed (optional)
  • Salt to taste

Instructions

  1. Whisk the yoghurt and cold water together until smooth.
  2. Add the cucumbers, herbs, scallions, eggs, and garlic.
  3. Season with salt and stir well.
  4. Chill for at least 1–2 hours.
  5. Serve very cold, optionally with ice cubes.

Cinnamon Banana Bread. No-Sugar & No-White Flour

Need something for breakfast or to snack on during the day? I got you.

One of my favourite things to do is cinnamon banana bread. Very often, I have ripe bananas left out, and this recipe is perfect for that. It is quick to prepare and lasts for days! I try to use ingredients that are healthier, but still make the final product sweet and tasty.
To further perfect it, I like to make a quick topping cream to balance the flavours out.

Ingredients banana bread

  • 2-3 very ripe bananas (the riper, the sweeter)
  • 8 dates
  • 2 large eggs
  • 110g unsalted butter, at room temperature
  • 140-150g oats
  • cinnamon (by heart, or about 1tsp)
  • Β½ tsp salt
  • 1 tsp baking soda (optional)
  • Β½ tsp vanilla extract (optional)
  • 115g walnuts
  • 1-2 apples or grated carrots (optional)

Ingredients topping

  • Chocolate of choice (optional)
  • 200g skyr (yoghurt can also be used)
  • Fruit of choice or 1-2 dates (optional, but nice to add sweetness)

Instructions

  1. Blend the bananas and the dates until smooth. You can cut up the dates beforehand, so that it is easier.
  2. Optional: Leave the blended mixture in the refrigerator overnight, so that the flavours can develop more. If you don’t want to wait, that’s okay, you can continue right away.
  3. Transfer the mixture into a big bowl.
  4. Add the butter and the eggs and mix slowly.
  5. Blend the oats until fine to create oat flour.
  6. Add the oat flour, cinnamon, baking soda, vanilla extract, and salt and mix to combine.
  7. Optional: Cut the apples into cubes or grate the carrots and add.
  8. Crush or chop the walnuts and add.
  9. Mix all together until evenly distributed.
  10. Transfer into a baking dish and bake at 180 Β°C for 40 minutes. (Baking time depends on your oven. With my small one, longer is needed, so just make sure to check on the banana bread from time to time and take it out when ready)Waiting for it to bake can be challenging, as your whole room will start smelling like a cinnamon roll. However, in the meantime, you can prepare your topping!
  11. If you decide to add a fruit, you can either serve it on the side or blend it in with the skyr. I often do banana + skyr or mango + skyr, which I blend together until smooth. The same goes for the dates.
  12. Put in the refrigerator while the banana bread finishes baking.
  13. Optional: After taking the bread out of the oven, you can put some chocolate flakes to melt on top.
  14. Serve the bread hot from the oven by adding the topping, or enjoy it later anytime:)
